Default calculating volatility

I have a series of 7 numbers - weekly - for demand by department and want to calculate volatility to be able to identify and rank which department shows the greatest change. I calculated the change from week to week and can convert that to a percentage. But I want to get one number to represent each department. Any suggestions?
