Can someone please tell me how to set up a formula so that I can add time
units together e.g 6minutes and 32 seconds + 5 minutes and 48 seconds to get a result of total minutes and seconds |

What format are they in now?
If you're using XL recognized time formats, just add the cells together =Sum(A1:A5) and format the totaling cell to [mm]:ss to prevent the minutes from rolling over into hours. Does this help?
