Suppose you have a future date in A1, then you can put this formula in
B1:

=IF(A1-TODAY()<0,"Time's up",IF(A1-TODAY()<8,"One week to go",IF(A1-
TODAY()<31,"Final month","Lots of time yet")))

This should give you some ideas to play with.
