What formula would I use the get the average of each set subtracting the MIN
and MAX out of each?

Judge 1 10 10
Judge 2 8 8
Judge 3 9 9
Judge 4 9 9
Judge 5 9 9

One way


=TRIMMEAN(A1:A10,0.2)


or written

=TRIMMEAN(A1:A10,2/COUNT(A1:A10))
