Default Time Formula

Is there a formula that displays the current time? Now displays the date and
time.

Change the cell format from General, or whatever it is currently set to, to
Time.

You could do this...

=NOW()-TODAY()

More than likely, this will display as a decimal value, so you will probably
have to format the cell as Time.
