Default calculating time for late hours

I am trying to calculate the time for a time sheet and billing purposes. i
need to know the hours between 7pm and 7am

Currently we are using standard time sheets ex. Start: 7:00 end 20:30... i
need to know and seperate out the time between 1900 and 20:30 to get in
another cell for a higher billing rate. the higher billing rate is from 1900
to 700 or 7PM to 7am ...

MS Project has this functionality built in. Just FYI.

For the second link, you can define the working hours period to be
your defined higher billing rate period.
