Default Linked worksheets

I have a worksheet for inventory that has the item and the cost. We link po's
to this worksheet so that when we open them the amounts fill in. Our problem
is once the po is completed we do not want the numbers to update if it should
be reopened after changes are made to the first worksheet. Is there a way to
prevent this from happening. We have tried to change the update to manual,
but the program will not allow us to do this.
