Default Protect some sheets in an xls but not all.

I have a workbook stored on a shared file with multiple tabs. I want to only
allow myself editing capabilities on all sheets but one. I read about
"allowing users to edit ranges" on each sheet and that seems like what I want
to do but it doesn't work.
