Default Data/From Web

I've been experimenting with the idea of extracting horseracing speed data into
Excel on a daily basis.

I'm using Excel 2007 which has gained some flexibility when accessing from an HTML
source and does have a Refresh All button to update any data. Excel also makes it
easier to access data from other sources. However, some of the tools appear to have
disappeared like Edit Query?

Essentially, I would like to access the speed data for all racecards and dump the
data into Excel for manipulation using a macro.

Life is made more difficult as the URL's change daily.

Are there any good sources for sorting this problem out?

TIA.
