Default Protect sheet

I know this is not a development question, but:
I had hoped that changing to Excel 2003 would let me filter, sort, or
refresh pivot tables while protected as said in the publicity. Tools,
protection, protect sheet lets me tick locked cells, unlocked cells,
autofilter, pivot tables, sort. But after protecting, I am back to the
same as the old Excel.

The help button seems to make no mention. What am I missing?
