Recalculating with a new total

I have a spread sheet to input daily orders from 8 depots
onto which totals them up and creates a simple despatch
sheet.
When we can not make the total order I usually take a few
cases off by hand until the new total is reached. Is there
a formula to recalculate more accurately?
