Default Permanent change of Field Settings in Pivot Table

I have recently started using pivot tables. In the final 'Grand Total'
column of the pivot table, I actually want 'Average' instead of 'Total'. I
have worked out how to change this using Layout in the Wizard, or by right
clicking on the column to change the field setting.

However, if I drag another data set from the PivotTable Field List into the
Drop Data Items Here area, this automatically gets totalled instead of
averaged, even though it is tabulated in the same column which is still
listing the averages of the first data set.

Is there any way that I can get the whole of the final column to default to
'Average'? I need to keep dragging data sets in and out of the Pivot Table
and don't want to have to change the field setting every time I do so.
