Default entering numbers in the cells in excel

when entering numbers into a cell, how do you change the format from it
automatically changing the numbers inputted into date formats ? for example:
7-3 gets changed to 3-Jul.

The easiest way is to precede the 7-3 with an apostrophe ('). Then Excel will
not modify it. You could also preformat the cells to text, which will stop Excel
from changing them.
