Default Turn off header and footer from auto appearing in a new worksheet.

I am using Microsoft Office Excel 2003 and every time I add a worksheet to a
workbook or start using the new workbook that automatically opens when you
open Excel, the worksheet already has a header with the page number in it and
a footer with the file path, name, date and time in it. I would love to turn
this function off because I don't need it most of the time. I have looked
through options but can't see anything to fix this.

Also, if anyone happens to know how to make it only add 1 sheet instead of 3
to an existing workbook when you insert a sheet that would be helpful as well.
