I'm trying to insert a long paragraph in an excel document across multiple
cells/rows. Keep getting back ### as display. I've changed the format to
wrap text and ensured merge cells was selected.

Try changing the format to General (from Text).

Have you tried pasting special and changing the type of text that you
are pasting into the cell/ cells?
Also you may want to try eidt, clear all in the area you are working as
the cell may have been formatted in some manner
