I would like to expand and collapse groups of columns just like the subtotal
function does with rows; with a minus sign to collapse and a plus sign to expand in the gray area for rows. Could I do that with columns? |

Not using data|subtotals, but you can use Data|Group and outline.
Select a few columns and do Data|Group and outline|group.
