Default Dynamic Data Capture

How do I capture the data in dynamic cells at specific time increments ( 15
min, 30 min, 1 hr, etc.)? The dynamic data is the calculated results of a
live feed. I'm trying to establish a trend over time by using this
"snapshot" data in a table or chart.
