How do you make an ongoing spreadsheet that never ends?

Never Ends? If you mean in terms of the number of rows you can add, then
Excel is limited to 65,53X rows (Excel 2000). Future versions of Excel will
probably give more.

If you need more rows, consider using Access. You are still limited in
size, but you will get far, far more rows than Excel and get better
organization with needing to duplicate stuff.
