Default enlarge validation drop down box excel 2000

I use validation drop down dialogue boxes in Excel 2000 to fill in purchase
orders from an existing list of products. This works fine for the most part
but I have a few questions. I have close to 1000 products on my list. When I
use the drop down box to fill in my forms, the box is too small or too
sensitive. With the list being that long, the data displayed in the box tends
to jump around when I scroll, page up or page down. I feel that if the box
could be made longer, the data would be more stable and easier to access. Is
this possible?

It appears to me that my validation list is only ever available to be
referenced when it's included in the workbook I'm working in. This leads to
multiple copies and problems with keeping them all current. I'd like to have
one copy of the list and be able to reference it in any workbook that I
choose to work in. Is this possible?
