how can i make 'global' changes to all worksheets in a workbook?

Depends what you want to change. Somethings eg formatting you can do by
selecting all the sheets. Select first sheet, hold shift key and select last
sheet. Make changes and then right click any sheet and select Ungroup Sheets.
