It will be very useful for me if somebody can help me how can I extend list
of last open documents in excel. If there are some options option in Excel
or I need to download some software.

If you'll click Tools Options and then select the General tab, you
can check the Recently Used Files box and set Excel to show up to a
maximum of 9 files.
