If you used data|subtotals to apply the subtotals, then use the outlining
symbols to the left to hide the detail rows and sort the data by the field you
want.

go to the view where you just see the subtotals, highlight what you want to
sort, on the menu bar: Edit / Go to / Special / Visible Cells Only
then Edit / Copy, then paste into another sheet. You can now sort that as
usual
