In Excel 2007, how do I set the calculation method in pivot tables so the
default is "count" (rather than "sum," "average,", etc)? |

You can't change the default.
You'll end up with Sum if all the cells in that field are numeric (no empty cells, too!). You'll end up with Count if at least one cell is not numeric (empty or text).
