How do I save one worksheet out of my workbook?

Your best bet would be to copy the sheet to a new workbook and then save it.

Right click the sheet tab, select "Move or Copy..."
In the "To book:" dropdown select (new book), check the "Create a copy"
checkbox and click OK.
