Can anyone explain how to conditionally change the text colour in a
spreadsheet - for example show negative numbers in red and positive numbers
black ?

Select the cell.
Click on Format, Conditional formatting.
next to Cell Value is, click on the dropdown, and select Less than. In the
adjacent box insert a 0
click on Add
Select your font colour
Click on Add, change Between to greeater than, and repeat.
OK out

one other way without conditional formatting
select the cells
right click and select Format Cells
in Number tab, select Number
choose the format you want from Negative numbers
OK out
