Default removing blanks

I have read the tips on removing blanks but when I hide this field, it
automatically removes the Grand Total column and I cannot find a way around
this.

The other way to report data in a pivot table and not have blanks is to set
the cells where the pivot data looks each time a new entry is made, but this
is very tedious.

Thank you for any help.
Excel 2004 for mac.
