We're trying to decide if it would be beneficial to upgrade from excel 2000

The differences are too numerous to mention.

If you have not seen Excel 2007 before and open it for the very first time
you will not recognize it at all! The user interface is completely different
from previous versions.

I would suggest you go to a Microsoft site where they have previews of Excel
2007.
