How do I get the default workbook page to come up without the Help/Task
Pane?

Uncheck that Option. Where, depends on the version.

Forgot to mention Excel (Office) 2003 - I'm still looking, but I haven't
found the option

I think click Tools, Options, and look on General tab.

Uncheck "startup task pane"
