When you say "I have deleted all the cells below the text.", do you mean:
(A) I cleared the cell contents/formatting. (B) I have set my printing cell range to exclude any empty cells beneath what I want to print. If (A) then, that's not what you need to do. You need to ensure that your print range is set to be only what you what to print (and center). From the FILE menu, choose SET PRINT RANGE (I'm on 2007 and that menu doesn't exist any more, so I can't confirm the submenu option).
