Default Converting Text to Function

I have a DDE link in the following format: =TOS|LAST!IBM

This represents a command to go to a broker (TOS) and pickup the last trade
price for IBM. When I try to convert the function to text and do a
automatic replace of IBM with another stock symbol, such as MSFT, I cannot
get the resulting text to convert back to a DDE function. Is there some
command whereby I can instruct the cell to add an = sign and convert the text
to a function?

Setting up a UDF called Eval allows you to pass a string to be
evaluated.
