If you have the analysis toolpak installed (look under Add-Ins), or if you have
Excel 2007, you can use the formula:

=WORKDAY(TODAY()+3,1)

Note that there is an optional [holidays] argument where you can also exclude
holiday days in calculating your "due by" date.
