Default Hand styling an org chart

I am doing what I see in a Microsoft online tutorial referred to as "hand
styling", basically overriding the formatting (eg fill color) of individual
boxes or levels or branches of an org chart/diagram. Here is a link to what
I'm looking at:

It tells me to select the box, level or branch, then use the drawing tools.
When I do this, I get no option for color in say the fill color or border
color. Any suggestions? Thanks.
