Default Format wonky

I just inherited at work an old machine with Excel 2002. When I have any
spreadsheet open, the format of the column changes willy-nilly. Is there any
way to protect formats? For example, I enter a date and it formats as
currency -- or vice versa. Seems to be no pattern.
