Default Charts

Hi, I hope you can help me. I am new to Excel. I am including a few basic
charts in a graduate research paper and have two questions.

1) How can I change the name of the bars from the numerals (right now they
are labeled 1, 2, 3, etc) to text titles? I have clicked all over and can't
find any way to do it. So far my solution has been using the x-axis title,
but the numbers are still there and it looks awful.

2) On two of my y-axis titles the last couple of letters in the title are
cut off when I import the chart into a Word document. Weird, right? In
Excel I can see all the letters when I zoom in on the print preview, in Word
they are cut off. I tried to "stretch out" the text-box type thing the title
is in, but it will only let me move the whole box, not chnage its shape.
Help!
