Default Excel Forms vs InfoPath

I need to design a form that is user friendly. Forms will be sent via email
and upon completion of forms data needs to be tracked. I would like to know
which application is best to use. What are the major differences between
Excel and InfoPath? Which is easier to keep track of? Thank you in advance
for any help you can provide.
