Default Globally replacing *

Is simple way to do a global replace * (as an asterisk not a wildcard)? For
example how would I strip out the *100 from the following which is in
multiple cells on a sheet

SUM('Total Volume'!B5:M5)*100

Many thanks in advance for your help.
