How do I get the Total Editing Time generated in the Statistics tab of the
document properties in an Excel spreadsheet?

AFAIK, no version of XL actually calculates Total Editing Time. You'd
have to first assign a value to the property. You'd probably want to do
that using an event macro, but that would depend on how you want to
define "editing time".
