Default Change Office 2007 delaut "save" format

I'm asking this here although it applies to Office 2007 across the board.
My brother is having trouble sharing files saved with his Office 2007 with
people using earlier versions. How can he change the default save format to
something compatible with other versions?

He can choose Excel 97-2003 there
