Default extract data from a random list & place in another ordered list

looking for a way, in excel, to organize data( by buyer) from an existing
excel spreadsheet that lists items according to when said item was auctioned(
ie.. first, second, third...etc.)

You can always use a pivot tabe.
Data - Pivot Table
Select the rows and columns you want (you can select entire columns if you'd
like)
Drag the Buyer field into the "Row Fields" section
If you want to know, say, how many items a buyer bought, you can put the
Items column in the Data section.
If you want it broken out by how many items per day were purchased, drag the
date field into the "Column Fields" section as well.
