Our IT Department recently updated my system and I am now using Microsoft
Office Excel 2003 which is part of Microsoft Office Professional Edition 2003.

When I select File, Open and the Icons that are displayed on the left side
of the box a My Recent Documents, Desktop, My Documents, My Computer and
My Network Places. Under my old version of Office there was an Icon called
Favorites which I used quite a bit. Is there a way to add the FAvorite Icon
back to the File, Open box?

Yes there is.
Browse to the Favorites folder and select it in the main window.
At the top right corner of the Open box is an icon named "Tools".
Click the down arrow next to it and select "Add to My Places".

You can add folders to that "My Places" location by:

File|Open (to see that dialog)
traverse the directory structure so that you can see the folder you want to add.
select it
tools|Add to My Places
