Default Where can I find list/table of functions/formulas

I'd like to find a list or table of all the various functions/commands and
the keystroke commands. By that I mean when you hit CNTRL + ; it give
today's date. Other things like that. Is there a list someplace?

They are called keyboard shortcuts, you will find them in HELP,
but they are hard to look at there because you can only see a
few at a time, see ...

Search Excel's Help for 'keyboard shortcuts' - they're all in there - initial
page will show you their general grouping, links will show you the detailed
keystrokes.

I see now that your question was actually ambiguous and you may have
been trying to ask MORE than one question.

Where to see a list of functions in Excel
if you see Fx on your toolbar then click on that then choose
"All" for the category, if you click on a function you will see a little
syntax below. using SHIFT+F1 or dragging the [?] to an item
does not help you much with this particular dialog box.

In HELP if you type in Function you will get a list of cateogries
and can work from there.

If you would like a working workbook with many of the builtin Functions
shown as examples see

Excel Function Dictionary « by Peter Noneley, which is a reference to
definitely download and maintain on your computer, the workbook
has 157+ sheets each with an explanation and example of an Excel function.

If you want a listing showing the names and some additional information for
each of your own Functions and Macros you can list their names with
see Subroutine and Function Table for Open Workbooks
