Default Number Entry in Excell

How do I enter numbers that start with zero i.e. 01-1-5121? Every time I
enter a number like the one previously noted, it changes.

Default Number Entry in Excell

Either pre-format the cell as TEXT, or type a leading apostrophe before the
first zero. The apostrophe will not show up in the cell but automatically
formats that cell as TEXT.
