Default Learning about Charts

I am a relatively new user to excel and I have been asked to make a dynamic
Line Chart to show the total amount of work in 8 hour days, per 7 day week
for a work group. When I say dynamic, I mean that the current week is the
centre of the chart, to the right is the weeks of work dated in the future
and to the left in the past.
The way the information appears in the worksheet is the jobs are in rows and
the info for each job is in the columns. Eg. Order, Work Center, Planner
group, Work, Earl.start date.

I need to group the Orders by weeks and the week being Saturday to Friday.
Filter by Planner Group and by Work Centre as there could be more than one
Work Centre per Planner Group.

In my report I can have anywhere from 3,000 to 15,000 rows.

I hope someone can point me in the right direction.

All help appreciated.
