You want to keep the formula unchanged, but get a different result. That's funny.
Here is what I might do...
=CHOOSE(WEEKDAY(TODAY()),TODAY()+1,TODAY()+1,TODAY ()+1,TODAY()+1,TODAY()+1,TODAY()+3,TODAY()+2)
Format the cell as: ddd.mmmm.dd.yyyy
