The data values and number of entries can be completely different. I think
there is a setting somewhere to automate the chart update but I can't find it.

I've run into this problem too. What solved it for me was this: make sure that the field (column) references for your horizontal X-axis labels is the same as the field (column) references for your other data. If your field reference for x-axis labels ends before the field reference for your other data, the most recent data points won't appear in your graph.
