Your formula gives the correct result, but as text. Could use:

=VALUE(TEXT((LEFT(B1,2)&":"&RIGHT(B1,2))-(LEFT(A1,2)&":"&RIGHT(A1,2)),"HH:MM"))

then format the number as time
