It sounds like you have autocomplete turned on.
Tools|Options|Edit Tab|Uncheck "enable autocomplete for cell values"
Remember where you changed this setting. Someday, it might make data entry
easier for you.
(I usually keep this disabled, too--I only turn it on when I'm doing lots of
typing of the same stuff.)
