Default Sort in Greek alphabetical order

Good thought, but I think Custom Lists only allow up to a certain number of
characters (upper 200's, as I recall). It just may not be something that can
be done!

Tools - Options - Custom Lists.

You basically tell Excel what order a set of words should go in, and then it
will sort by that. Its also how it knows how to sort days of the week.
