Default conditional formatting dates to change if its more than 3 days go

Select all cells that you want to CF. Say the first one in the
selection is A2. Format Conditional Formatting...

Choose Formula Is:

=TODAY()-A2<3
=(TODAY()-A2=3)*(TODAY()-A2<5)
=TODAY()-A2=5

Use Add to input the 2nd and 3rd formula. Choose the appropriate
format for each.
