Default can you set up global headers & footers for all sheets in a file?

You should group the sheets together - right click on a sheet tab and
then Group All Sheets. Now, whatever changes you make to one sheet
will be reflected in all of them (so be careful !!). Set up your
Header/Footer as required, and then Ungroup the sheets once you have
finished (right-click a sheet tab again and Ungroup sheets).

Do a similar thing to edit the headers.
